Easy Walnut Oil Potato Salad

Looking for an easy potato salad recipe (but want it to taste different this time, right) ? This is the easiest and kitchen-clean salad you can make for your loved ones.

1/4 cup

of cold pressed Walnut Oil

1 tbsp

tarragon or cider vinegar

2 tsps

 Dijon mustard

2 tbsps

 Olive oil

1 tsp

 Honey

900gr

Potatoes

1 tbsp

Chopped fresh tarragon leaves

1 pc

 finely chopped large shallot

to taste

salt & freshly ground black pepper

2 tbsps (optional)

 walnut pieces

2 tbsps (optional)

 chopped cornichons or gherkins

Preparation

(0. If you’re using the walnuts, place in a hot oven (about 200 C/400 F/Gas 6) for a few minutes until beginning to colour slightly. This gives a fresher, less bitter flavor to the nuts.)
1. Cook the potatoes in boiling salted water for about 20 minutes until tender.
2. Drain well and, when just cool enough to handle, cut into halves or quarters.
3. Place the potatoes in a mixing bowl with the tarragon, shallots, cornichons or gherkins and walnuts, if using.
4. Place the vinegar, mustard, Walnut oil, honey, salt & pepper in jar or in the bowl of a small hand blender. Blend or shake well until creamy. Spice it more to taste, if you want to.
5. Toss in as much or as little of the dressing as you want in the potatoes.
6. Serve just warm. If you’re not eating straight away, refrigerate & return the salad to room temperature before eating.
