Potato Puree with Walnut Oil

This is a recipe that we encountered on in Martha Steward’s website ( yeah, we check on it every once in a while :) As Martha said – this is a “classic mash bolstered by the luxurious addition of walnut oil”. For what is worth, we know it’s a delicious alternative of the common potato puree we serve.

1 tbsp + 1 tsp

of cold pressed Walnut Oil

900gr

Potatoes (3 – 4 potatoes)

3/4 cup

whole milk

1 tbsp

unsalted butter

to taste

white pepper

to taste

salt

Preparation

1. Peel the potatoes & place them in a large pot, and add enough water to cover them & Add 1 teaspoon salt. Boil until tender (about 10 minutes). Drain & pass hot potatoes into a large bowl. Cover to keep warm.
2. Combine milk, butter, and 1 tablespoon salt in a saucepan over medium heat, and cook until steaming but not bubbling!
3. Add hot-milk mixture to potatoes & stir until smooth.
4. Stir in oil.
5. Season with pepper.
